  • 1/2 tsp garam masala

  • Salt to taste

  • Fresh coriander leaves (for garnish)

  • Lemon wedges (optional)

Instructions:

  1. Clean the squid properly – remove the beak, ink sac, and transparent backbone. Rinse thoroughly.

  2. Heat oil in a pan. Add mustard seeds, let them splutter.

  3. Toss in curry leaves, then add chopped onions. Sauté till golden.

  4. Add ginger-garlic paste and green chilies. Sauté until raw smell disappears.

  5. Add tomatoes and cook till soft and oil starts separating.

  6. Add turmeric, chili, and coriander powder. Mix well.

  7. Add squid pieces and stir everything together.

  8. Cover and cook on medium heat for 6–8 minutes (squid cooks quickly).

  9. Once the squid is tender, sprinkle garam masala. Stir and cook for 1–2 minutes.

  10. Garnish with fresh coriander and a squeeze of lemon.

🔥 Tips for Perfect Squid Masala:

  1. Don’t overcook squid – it turns rubbery. 6–8 minutes is ideal.

  2. Marinate briefly with turmeric and a bit of salt before cooking for enhanced flavor.

  3. Use fresh squid for best taste. Frozen can work, but thaw it fully.

  4. A splash of vinegar or lemon juice can brighten the masala.

  5. Add a bit of crushed pepper at the end for an extra kick.

  6. Serve hot with rice, chapati, or Kerala parotta!
